My Mom.

Happy Mother's Day Mom!


This is a little tribute to my awesome mom, Colleen. The world is a whole lot brighter because of her love and her 'spirited' and energetic love of living.
I just think the world of her and wish I've told her more often. I love her so much.
Bright, always funny, extremely tenacious, and a survivor of a crazy life, she was never one to feel sorry for herself and today, she continues to be that same person.

I've have been blessed with a fantastically wonderful life with my mom and sister and dad and now daughter, husband, nephew, niece and brother-in-law. I really have been blessed with a magical life.

I wanted to share with you my mom.

For the majority of us, we have always had our mothers love us, support us, raise us, hug us, kiss us and tuck us in a night. What's a day without a bedtime story to complete it? That's what mom's are for: SAFETY NETS! My mom was all of that and then some including not only bedtime stories but being sung "Christopher Robin" at bed time to make sure we had good dreams...Although my mom was raised a little differently and as life would have it, by her aunt and uncle and 3 cousins, she still prospered.

She used her gift of a beautiful voice and inherent musical talent to propel her into a life of happiness and awards for singing and piano, and still does to this day. At 18, she connected with my dad, at Kingston Road United Church and at 21 she married the love of her life.
My father built architectural models for a living.
They waited 7 years to have me and enjoy their new found life together and be ready for kids. My sister was born a year and half later after me and the magic of our family began.....My mother's love of life, her giving ways and and her connection to my sister and me was unique. She was the 'go-to' mom for us and all of our friends too. We could tell her anything and knew that it wouldn't be shared with my dad. She knew that some things just were meant for her ears only. :)

She and my dad were very close and the greatest hosts on the planet. Always inseparable, my mom and dad spent most waking moments together be it cottaging, gardening, and an afternoon glass of wine or a gin and tonic on their deck and watch the sun set...and they would have it no other way. Sadly, my dad died suddenly in 1995 and somehow my mom, who was 60 at the time, found the strength and courage to continue to pursue her career in real estate and take charge of her life even further. She never gave up.

In spite of not having a typical upbringing with the daily love of her 'mother', my mom rose to live an extraordinary life. She is the grandma to go to when in need for her three grandchildren Erinn, Connor and Lizzie and she's the person that my sister and I can count on any time, whenever we have news to share or a shoulder to lean on.

She is a wonderful mother-in-law to her two sons-in-law too. Her strength and tenacity for life is one I've tried to model my life by and will be eternally grateful for her showing me the rules of life and to grab it while you can.

Kelly Childs and MANIFESTING YOUR LIFE.

Do you ever visualize what's possible in your life or business? 
Do you dream about things you want to happen and how you want your life to look?
Apparently, this is what I'm told I do and that also I'm a manifestor. 
Hhhmmmmm.... Well a manifestor is someone who is a great catalyst in life. Wherever I go and whomever I meet, it seems I'm a trigger and cause for well, 'activity', you might say. I laugh a lot, I cry a bit, I talk a lot, I FEEL so much, I share a ton, I guess you could say I'm really passionate about my purpose. I really want to help this planet and all of it's inhabitants really change, live like there's no tomorrow and do it pain-free with healthy bodies. Sound Easy? All is takes is the first step.

I've been trying to put together videos and ideas for you to start to follow and be motivated by and this is one such video. This was such an awesome interview in Palm Springs CA. This is one of my most favourite places on the planet. While we were down there, we discovered this incredible gem of a cafe, called Palm Greens Cafe. It's warm and cozy, great atmosphere, friendly and inviting staff and two fantastic restaurant partners "Greg and Jeff".

I was thinking that for some of you, it may be impossible to meet some crazy driven, passionate like-minded people so I thought, "Why not create this online community of crazy passionate people and bring these people home with me via Youtube and share what I'm learning?"

Who doesn't love the choice of locally grown food, the sun and most of all, the dry heat from the desert sun.
To meet a fellow restaurateur that really shared my passion for food and creativity was incredible! Greg Schmitz owns Palm Greens Cafe and has that unwavering desire to help the planet and he and his partner Jeff have been busy at it for decades.

(FYI....for those of you unfamiliar with Palm Springs it has incredible mid-century architecture and, it was the hangout for Dean Martin, Frank Sinatra, Bob Hope, Sammy Davis Jr., etc....aka the "Rat Pack", back in the 50's.)

Roasted Red Pepper Hummus- Kelly Childs


This is an easy delicious dip for adults and kids alike. A great source of protein and fibre in every bite. We actually have this on the menu at Kindfood sometimes as it works really well in a Collard Wrap or a substituion for mayo in our Kind Sandwich.

I've been using this recipe for years and it never fails to give me a healthy snack that I could easily make every day. The trick to eating better (try to do the best you can every day) is to have healthy things in your fridge and pantry at all times so that you won't be tempted to indulge in processed, sugary, fatty, unhealthy foods.

Here's how you get started.....and you will need a food processor for this recipe.

Ingredients:
1 15oz can of garbanzo beans, drained and rinsed.
1/2 cup water-packed roasted red peppers (about 2 peppers)
2 tbsp organic tahini
3 tbsp organic olive oil
3 tbsp organic lemon juice
2 garlic cloves (or more to taste)
1/4 tsp ground cumin
1/8 tsp chili flakes
pinch of sea salt and pinch of pepper


Combine all ingredients in a food processor. Process until completely smooth, about 2 minutes.
Serve with Toasted Gluten Free pita or better yet, carve up some organic veggies and have them ready for when the kids get home!!

Calories: 87, Fat: 3g, Saturated Fat: 0.4g, Cholesterol: 0mg, Protein:4g, Carbohydrates: 12g, Fibre:2.8g, Calcium: 37mg, Iron: 1.5mg, Beta Carotene: 265mcg, Vitamin E: 0.3mg, Vitamin C: 21.7mg.
